We had our annual Thanksgiving feast at the office today. I need a nap now but that will have to wait. I ate wayyyy to much. This is what I brought….
Texarkana Corn Casserole
1 can cream style corn
1 can corn (drained)
1 half large onion or 1 small onion
2 eggs, beaten
1/2 cup yellow corn meal
6 T. wesson oil
1/2 t. garlic salt
2 jalapenos, chopped or jalapenos to taste (I add a bunch because I like it hot)
Mix all together and put in a greased casserole dish or casserole aluminum pan. Sprinkle some shredded cheddar cheese on top. Bake for 45 minutes at 350 degrees….Yummy
I call it Texarkana Corn Casserole because I got the receipe in Texarkana. A friend of my aunts brought it over when my papaw passed away.
